1 cup white flour
1 tablespoon/1 package yeast
1 teaspoon salt
1 cup warm water
2 Tablespoons extra virgin olive oil
1 1/2 cup whole wheat flour plus enough white flour to form a firm dough
Combine 1 cup flour, yeast and salt. Add the warm water and oil. Mix together and slowly add enough flour to form a dough that does not stick to the sides of the bowl. Cover, set aside and allow to rise until doubled (normally about 1 hour but with the summer heat it only took 1/2 an hour). Take the dough out of the bowl onto a floured board and knead, adding flour as needed so it doesn’t stick to your hands. Work for at least 5 minutes. Form dough into a log for a loaf or cut into 6 pieces for large rolls (great for sandwiches/burgers) and place into a greased loaf pan or parchment paper lined baking sheet.
Cover and let rise until doubled (about ½ hour). Bake at 350ºF for 30-35 minutes until bread is golden or 20-25 for rolls. Remove from pan/sheet and cool on a wire rack.
