Easy Yellow Squash with Ginger and Garlic

2 yellow squash; cut into bite size pieces
1/2 red pepper; cut into thin 1 inch strips
fresh greens from 1 onion; sliced (or 2 Tablespoons diced onion)
3 cloves garlic; sliced
1 inch piece of fresh ginger; minced
2 Tablespoons extra virgin olive oil
2 Tablespoons (gluten free) soy sauce
2 Tablespoons ketchup
1/2 teaspoon sea salt
1/8-1/4 teaspoon fresh ground black pepper

8 oz whole wheat pasta (or 1/2 cup quinoa)DSC_0001

Put on a pot of water for the pasta (or cook quinoa for a gluten free meal). Mix vegetables, olive oil, soy sauce, ketchup, salt and pepper in a bowl and pour onto a baking sheet. Place under broiler for 10 minutes at the same time that the pasta goes into the boiling water. I served greens on the side of this dish with a homemade vinaigrette.
